    The Secret Behind Our Guacamole

We are sharing a glimpse into what makes our fresh, daily made guacamole so irresistible.

The Secret Behind Our Guacamole at La Sierra Mexican Restaurant in Forest Grove

If you have eaten at La Sierra, you have probably had our guacamole. It shows up on fajita plates, on burritos, on the side of tacos, and in a bowl with chips at the table. We make it fresh every day, and there is no single secret trick. There are a few simple things we refuse to skip. Here is what goes into the guacamole our Forest Grove regulars ask for by name.

    It Starts With Ripe Avocados

Everything depends on the avocado. We use avocados at the right ripeness, where they yield to gentle pressure but are not mushy. An underripe avocado tastes flat and waxy. An overripe one gets brown and bitter. The window is small, and we watch it closely. That is why our guacamole tastes clean and green instead of dull. You cannot fake ripeness, so we do not try.

    Mash, Don't Puree

We mash our guacamole by hand, never in a blender. A blender turns it into a smooth paste, which is wrong. Good guacamole has texture, some chunks of avocado that hold their shape against the lime and the salt. Mashing by hand lets us control that texture so every bite has body. It is a small choice that changes everything about how it eats.

    Lime, Salt, Cilantro, Onion, Tomato

The flavor build is simple because it has to be. Fresh lime juice for acid and to keep the avocado green. Salt to bring out the avocado's richness. Cilantro for that bright, herbal note. Finely diced onion for a little bite. Tomato for sweetness and color. We balance these to taste, not to a rigid formula, because avocados change through the season. The goal is that every component is present but none of them shouts.

    Made Today, Eaten Today

Guacamole is a today food. It does not improve in a fridge. We make it in batches through the day so it is fresh when it reaches your table, and we do not hold it past its prime. That is why the color is bright and the flavor is sharp. It is also why it tastes a little different every time, because the avocados do. We are fine with that. It means we are cooking, not just assembling.

    Try It on Everything

The easiest way to taste it is a side of guacamole with chips, but it shines on the Sizzling Fajitas, the Carne Asada, and the La Sierra Burrito. You can add it to almost anything on our menu. Order online for pickup, dine in, or let us bring a fresh batch to your event through catering. However you have it, you are tasting something made today, by hand, the way it should be.
